Now and again I like to share a recipe. One of my children is a vegetarian and even though I’m a lot more knowledgeable about the use of tofu and lentils and such these days, I’m always looking to add to my vegeterian repertoire. Sorry I don’t have fabulous pictures to go with it but hope that you can use the recipe.
Bean Stew
Ingredients
1 red onion
1 – 2 red capsicums
3 tomatoes
1 large corn cobs
1 can kidney beans
1 can refried beans
4 – 6 garlic cloves
Oregano x 2 sprigs
Bunch of coriander
2 – 3 bay leaves
2 lime leaves (optional)
2 – 3 large chipotle chillies
Smoked paprika to taste
Cumin (optional
Method
Dice vegetables finely (boil corn cob) add kernels at end
Brown onions in canola
Add capsicum / tomatoes, bay leaves, oregano, lime leaves, chipotles
Add enough water
Add beans / refried beans
Leave on low flame for around two hours
Check on it now and again
Add smoked paprika and salt,
Check taste, remove some chipotles if getting too hot.
Add boiled corn kernels and coriander at the end.
Serve with corn chips / tortillas and guacamole (avocadoes and lime juice and coriander)
