Seeing that the previous article is about children behaving badly in supermarkets, I thought (and this is drawing a very long bow) that a recipe to follow might be appropriateOr it might not. You decide.

When your son has declared himself vegetarian and, unlike the friends who joined him is still stubbornly so, you get desperate to add to your slim repertoire of nourishing meals. I got this recipe  from a friend who got it from her friend. Any port in a storm.

Serves 4 – 6

  • 1 tin 4 bean mix
  • 1 red onion (diced)
  • 1 bulb fennel (diced)
  • 2 carrots (diced)
  • 2 tablespoons of olive oil
  • 4 cloves garlic (chopped)
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 ½ litres stock. I prefer chicken stock
  • Parmesan cheese and lemon juice
  • 1 bunch Tuscan cabbage (shredded)

Heat oil, add onions, fennel and carrots, and cook for several minutes. Add garlic, thyme and bean mix and cook for another minute. Add bay leaves and stock. Bring to the boil and then simmer for 30 minutes. Cover. Add shredded cabbage and continue cooking for 10 – 15 minutes. Top with grated parmesan cheese and lemon juice then serve.
