My husband doesn’t care for cheese which means he misses out on pizza and cheesecake and hundreds of other dishes that lose something in the translation if you don’t add the cheese. Here’s a cake I’ve been making for him on and off for the past four decades.
- 2 big lemons
- 1 can Nestles condensed sweetened milk
- 4 eggs (separated)
- 1 pack of Teddy Bear biscuits, or Marie biscuits, or any plain sweet biscuit.
Squeeze juice from lemons. Beat egg whites until they are stiff. Mix yolks thoroughly and one at a time with the sweetened condensed milk, add lemon juice. Mix all ingredients well. Fold egg whites into mixture.
Crush half a pack of biscuits. Grease cake tin, Melt some butter and mix enough with the biscuit crumbs to make them compact. Press biscuit crumb base at the bottom of cake tin, pour mix on top.
Bake cake for 50 minutes. Start at 250 degrees (120 Celsius) for approximately 10 minutes. After the cake has risen increase to 300 degrees (150 Celsius).
I like cheese but have never cared for cheesecake for some reason. My husband, however, loves cheesecake so I bake them for him. I can’t wait to try this recipe for myself!
